I'm running pihole and smokeping on the same raspberry pi. Both on port 80
and they seem to not get along, as I can't bring up the smokeping web
interface anymore.

I've gone through the documentation, but can't find a global parameter to
change the default from 80 to 8080 or 8081 or something else.

Is it possible? If so, how?

Smokeping isn't a web server, it is a cgi application that runs on a web
server loaded on a host. If you want to change that then you'll need to
edit your web server's configuration to accept an alternate port.
